Ingredients

  • 350g of your choice of pasta
  • 1 head of escarole
  • 80g Parmigiano Reggiano DOP 36 months
  • 50g nduja
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Begin by cleaning and chopping the escarole. Cook it in salted boiling water for about 5 minutes until tender. Drain and set aside.
  2. In a blender, combine the escarole with grated Parmigiano Reggiano, a drizzle of olive oil, salt, and pepper. Blend until smooth to create the escarole cream.
  3. Cook your choice of pasta in salted boiling water according to the package instructions until al dente.
  4. In a pan, gently melt the nduja over low heat. Add the escarole cream and stir to combine.
  5. Drain the pasta, reserving a bit of the cooking water. Add the pasta to the pan with the sauce, mixing well. If needed, add a splash of the reserved cooking water to achieve your desired consistency.
  6. Serve immediately, garnished with extra Parmigiano if desired.
