Ingredients

  • 320g pasta (e.g., spaghetti or penne)
  • 300g fresh peas
  • 200g snow peas, trimmed
  • 150g salted ricotta, grated
  • 60ml extra virgin olive oil
  • 1 garlic clove
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fresh peas to the boiling water and cook for 3-4 minutes until tender. Remove the peas and reserve 100ml of the cooking water.
  3. In the same pot, cook the pasta according to package instructions. During the last 2 minutes of cooking, add the snow peas.
  4. In a blender, combine the cooked peas, reserved cooking water, olive oil, and garlic. Blend until smooth. Adjust seasoning with salt and pepper.
  5. Drain the pasta and snow peas, then mix with the pea cream. Stir until well combined and heated through.
  6. Serve the pasta topped with grated salted ricotta and fresh mint leaves.
