Ingredients

  • 200g shelled pistachios
  • 150g sugar
  • 150g unsalted butter
  • 3 large eggs
  • 100g all-purpose flour
  • 1/2 tsp baking powder
  • Pinch of salt
  • Ganache for decoration (dark chocolate and cream)

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour an 8-inch round cake pan.
  2. In a food processor, blend the pistachios into a fine flour. Set aside.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, incorporating well after each addition.
  5. Mix in the ground pistachios, flour, baking powder, and salt until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the ganache by melting dark chocolate with cream and pour it over the cooled cake.
