Ingredients

  • 1 cup Carnaroli rice
  • 2 ripe Fuyu persimmons
  • 1 cup Taleggio cheese
  • 1 small onion
  • 4 cups vegetable broth
  • 1 glass of white wine
  • 2 tablespoons olive oil
  • Salt to taste
  • Freshly ground black pepper

Instructions

  1. In a saucepan, heat the vegetable broth and keep it warm over low heat.
  2. In a large skillet, heat olive oil and sauté the finely chopped onion until translucent.
  3. Add the Carnaroli rice and toast for a few minutes until slightly translucent.
  4. Pour in the white wine and let it evaporate, stirring constantly.
  5. Add a ladle of warm vegetable broth and cook, stirring gradually.
  6. Meanwhile, peel and dice the Fuyu persimmons. Once the rice is halfway cooked, add the diced persimmons to the pan.
  7. Continue adding broth and stirring until the rice is cooked al dente.
  8. Remove from heat, add the diced Taleggio cheese, and stir until melted and creamy.
  9. Season with salt and freshly ground black pepper before serving.
