Ingredients
- 400g Arborio rice
- 1 liter vegetable broth
- 1 onion, finely chopped
- 100ml white wine
- 1g saffron threads
- 2 artichokes, cleaned and sliced
- 150g goat cheese
- 50g grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- In a pan, heat the vegetable broth and keep it warm.
- In another large pan, heat the olive oil and sauté the chopped onion until translucent.
- Add the Arborio rice and toast it for a couple of minutes, stirring frequently.
- Pour in the white wine and let it evaporate completely.
- Dissolve the saffron threads in a ladle of hot broth and add them to the rice.
- Begin adding the broth gradually, one ladle at a time, stirring continuously until the rice is creamy and al dente.
- Meanwhile, in a separate pan, lightly fry the artichoke slices until golden and crispy. Set aside.
- Once the rice is cooked, remove it from the heat and stir in the goat cheese and grated Parmesan cheese until creamy. Season with salt and black pepper to taste.
- Serve the risotto topped with fried artichokes and a sprinkle of extra Parmesan if desired.
