Spelt and Chicken Salad with Bimby® – Delicious Italian Recipe

Introduction

Spelt and Chicken Salad with Bimby® is a complete, nutritious, and flavorful dish that is incredibly easy to prepare. Spelt and chicken cook simultaneously, allowing you to prepare a delicious and balanced meal in under thirty minutes. This salad is ideal for buffets or as a lunch option for the beach or office. Perfect for summer, this salad is enriched with vegetables and dried fruit, and drizzled with a fragrant citronette—a delightful way to whet your appetite with taste and lightness!

Ingredients

  • 200g spelt
  • 250g chicken breast
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 50g dried cranberries
  • 50g walnuts, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the spelt under running water and add to the Bimby® bowl.
  2. Pour in water and a pinch of salt, and cook for 20 minutes at 100°C on speed 1.
  3. While spelt is cooking, season the chicken breast with salt and pepper.
  4. Place the chicken in the Varoma basket and cook for 20 minutes at Varoma temperature on speed 1.
  5. Once cooked, let the chicken rest for a few minutes before slicing it.
  6. In a large bowl, mix the cooked spelt, diced bell pepper, grated carrot, dried cranberries, and chopped walnuts.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create the citronette dressing.
  8. Pour the dressing over the salad, toss well, and top with sliced chicken.
  9. Serve immediately or chill for later!
