Ingredients

  • 320g of Carnaroli rice
  • 150g of fresh peas
  • 100g of crescenza cheese
  • 80g of pancetta, diced
  • 50g of butter
  • 40g of grated Parmesan cheese
  • 1 small onion
  • 1 liter of vegetable broth
  • 1 glass of white wine
  • Salt and pepper to taste

Instructions

  1. In a pan, sauté the diced pancetta until crispy. Set aside.
  2. In the same pan, add chopped onion and cook until translucent.
  3. Add the rice, toast it for a few minutes, then deglaze with white wine.
  4. Gradually add the hot vegetable broth, stirring continuously.
  5. Blend half of the peas into a smooth cream and add to the risotto.
  6. Continue cooking until the rice is al dente, adding more broth as needed.
  7. Stir in the crescenza cheese, butter, and Parmesan. Season with salt and pepper.
  8. Top with the remaining whole peas and crispy pancetta before serving.
