Ingredients

  • 1 whole branzino (approximately 1.5 lbs)
  • 2 medium zucchini
  • Juice of 1 lemon
  • 1 tablespoon vinegar
  • Fresh mint leaves
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by cleaning the branzino, removing the scales and innards, then rinse it under cold water.
  2. Slice the zucchini into thin rounds and grill them until they have nice grill marks and are tender.
  3. In a bowl, mix the lemon juice, vinegar, a drizzle of olive oil, chopped mint leaves, salt, and pepper to create the marinade.
