Ingredients

  • 200g couscous
  • 200ml water
  • 150g cherry tomatoes
  • 100g feta cheese
  • 80g pitted olives
  • 150g canned tuna
  • 100g chickpeas
  • 1 red onion
  • Juice of 1 lemon
  • Fresh basil leaves
  • Salt and pepper to taste
  • Olive oil
  • Vinegar
  • Sugar

Instructions

  1. Prepare the couscous by bringing water to a boil. Remove from heat, add couscous, cover, and let it absorb the water.
  2. Slice the cherry tomatoes, cube the feta cheese, and slice the olives.
  3. In a pan, cook the red onion with vinegar and sugar until soft and sweet and sour.
  4. Fluff the couscous with a fork and mix in the cherry tomatoes, feta, olives, tuna, chickpeas, and red onion.
  5. Add lemon juice, fresh basil, olive oil, salt, and pepper. Mix well.
  6. Chill in the refrigerator before serving.
