Ingredients

  • 500g sweet potatoes
  • 100g grated Parmesan cheese
  • 100g provolone cheese
  • 2 eggs
  • 100g breadcrumbs
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped aromatic herbs (such as parsley and thyme)
  • Oil for frying

Instructions

  1. Boil the sweet potatoes until tender, then mash them in a bowl.
  2. Add Parmesan, one egg, paprika, salt, pepper, and herbs. Mix well.
  3. Cut the provolone into small cubes.
  4. Take a small amount of the potato mixture, flatten it, and place a cube of provolone in the center. Shape into a croquette.
  5. Beat the remaining egg in a bowl. Dip each croquette into the egg, then coat with breadcrumbs.
  6. Heat oil in a frying pan and fry the croquettes until golden brown.
  7. Drain on paper towels and serve hot.
