Taroz is one of the most authentic and representative dishes of Valtellinese cuisine. This peasant recipe, originally a substantial main course, is made with simple ingredients like potatoes, green beans, and local cheese. Chef Stefano Masanti from Ristorante Il Cantinone in Madesimo (SO) has created a version that enhances the purity of the region and local produce. The creaminess of Valtellina Casera cheese is complemented by the aromas of herbs and a special touch of flavored butter. This dish narrates the story of the Lombard mountains and its deep connection with tradition and togetherness.
1. Start by peeling the potatoes and cutting them into small cubes.
2. In a large pot, bring salted water to a boil and add the potatoes. Cook for about 10 minutes.
3. Next, add the green beans and continue to boil for another 5 minutes or until both the potatoes and beans are tender.
4. Drain the potatoes and green beans, then return them to the pot.
5. Add the Valtellina Casera cheese cut into small pieces and the flavored butter. Stir until the cheese melts and coats the vegetables.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh herbs if desired.
