Ingredients

  • 500g Chicken breast
  • 2 Onions
  • 2 Cans of tomato sauce
  • 1 Chipotle chili
  • Salt to taste
  • Pepper to taste
  • 1 tbsp Olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced onions and sauté until translucent.
  3. Add the chicken breast and cook until browned on all sides.
  4. Stir in the tomato sauce and chipotle chili.
  5. Reduce heat to low, cover, and let simmer for 45 minutes until chicken is tender.
  6. Shred the chicken using two forks and mix well with the sauce.
  7. Season with salt and pepper to taste.
  8. Serve hot with rice, beans, or in tacos and tortillas.
