Ingredients

  • 200g all-purpose flour
  • 150g sugar
  • 3 eggs
  • 100ml extra virgin olive oil
  • 100ml milk
  • 3 golden apples
  • 1 lemon (zest only)
  • 1 tsp cinnamon
  • 16g baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
  2. In a bowl, beat the eggs and sugar until light and fluffy.
  3. Add the olive oil and milk, mixing well.
  4. Gradually incorporate the flour, baking powder, cinnamon, and salt, stirring until smooth.
  5. Peel and slice the apples, adding the zest of one lemon.
  6. Fold two-thirds of the apples into the batter.
  7. Pour the batter into the prepared pan, arranging the remaining apple slices on top.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before serving.
