Ingredients

  • 500g ground turkey
  • 200ml coconut milk
  • 2 tbsp curry powder
  • 1 egg
  • 50g breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Fresh coriander for garnish

Instructions

  1. In a bowl, combine ground turkey, egg, breadcrumbs, salt, and pepper. Mix well and form small meatballs.
  2. Heat olive oil in a pan over medium heat. Add meatballs and cook until browned on all sides. Remove and set aside.
  3. In the same pan, add onion and garlic, sautéing until soft.
  4. Stir in curry powder, then add coconut milk, mixing until well combined.
  5. Return meatballs to the pan, cover, and simmer for 15 minutes until cooked through.
  6. Garnish with fresh coriander and serve with basmati rice.
