Ingredients

  • 1 kg of potatoes
  • 200 g of spinach
  • 200 g of scamorza cheese
  • 50 g of grated Parmesan cheese
  • 50 g of breadcrumbs
  • 2 eggs
  • Salt and pepper to taste
  • Butter for greasing

Instructions

  1. Boil the potatoes in salted water until tender. Drain, peel, and mash them.
  2. In a pan, sauté the spinach until wilted. Set aside.
  3. Preheat the oven to 180°C (350°F). Grease a baking dish with butter and sprinkle with breadcrumbs.
  4. In a bowl, mix the mashed potatoes with eggs, Parmesan, salt, and pepper.
  5. Add the sautéed spinach and diced scamorza cheese to the potato mixture.
  6. Pour the mixture into the prepared baking dish, smoothing the top.
  7. Sprinkle with remaining breadcrumbs and bake for about 40 minutes until golden brown.
  8. Allow to cool slightly before serving.
