Ingredients

  • 200g gluten-free pasta
  • 150g fresh sardines, cleaned
  • 100g cherry tomatoes, halved
  • 50g gluten-free breadcrumbs
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 anchovy fillet
  • 1 red chili, chopped
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the gluten-free pasta according to the package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and anchovy fillet, stirring until the anchovy dissolves.
  3. Add the sardines and cook for a few minutes until they start to break apart.
  4. Add the cherry tomatoes and chopped chili, cooking until the tomatoes soften.
  5. In a separate small pan, toast the gluten-free breadcrumbs until golden brown.
  6. Mix the cooked pasta with the sardine sauce, season with salt and pepper, and sprinkle with fresh parsley and toasted breadcrumbs.
