Ingredients

  • 320g buckwheat pasta
  • 300g fresh peas
  • 150g fresh spinach
  • 150g speck
  • 1 onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Start by cooking the buckwheat pasta in salted boiling water according to package instructions.
  2. In the meantime, heat olive oil in a pan, add chopped onion, and sauté until translucent.
  3. Add fresh peas and spinach to the pan, cook until tender, then blend into a creamy sauce.
  4. In another pan, cook the speck until crispy.
  5. Once the pasta is cooked, drain and mix with the pea cream.
  6. Serve topped with crispy speck and a sprinkle of Parmesan cheese.
