Ingredients

  • Broccoli – 200g
  • Cauliflower – 200g
  • Zucchini – 200g
  • Carrots – 200g
  • Potatoes – 200g
  • Cherry Tomatoes – 200g
  • Smoked Scamorza Cheese – 200g
  • Breadcrumbs – 100g
  • Parmesan Cheese – 50g
  • Olive Oil – 2 tbsp
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Wash and dice all vegetables into similar-sized pieces.
  3. In a large bowl, combine the vegetables with olive oil, salt, and pepper.
  4. Add the diced smoked scamorza cheese and mix well.
  5. Transfer the mixture to a baking dish and sprinkle with breadcrumbs and Parmesan cheese.
  6. Bake for about 30 minutes, or until the vegetables are tender and the top is golden brown.
