Ingredients
- 400 ml (1 2/3 cups) coconut milk
- 100 ml (1/2 cup) heavy cream
- 50 g (1/4 cup) sugar
- 2 tablespoons cornstarch
- 1 pack of Pavesini biscuits
- 100 g (3.5 oz) dark chocolate
- 50 g (1/2 cup) toasted hazelnuts
- Shredded coconut for garnish
- Unsweetened cocoa powder for decoration
Instructions
- In a saucepan, combine the coconut milk, heavy cream, and sugar. Heat gently until the sugar dissolves.
- In a small bowl, mix the cornstarch with a tablespoon of cold water to create a slurry.
- Gradually stir the cornstarch mixture into the warm coconut mixture and cook on low heat, stirring continuously, until thickened.
- Remove from heat and let cool slightly before pouring into serving glasses.
- Layer the Pavesini biscuits, breaking them as needed, on top of the pudding.
- Refrigerate for at least 2 hours to set.
- For the chocolate ganache, melt the dark chocolate in a heatproof bowl set over a pot of simmering water. Stir until smooth.
- Remove the pudding from the refrigerator, drizzle with chocolate ganache, and top with toasted hazelnuts and shredded coconut.
- Sift cocoa powder over the top for added color and serve chilled.
