Ingredients

  • Orecchiette pasta – 320g
  • Miso paste – 2 tablespoons
  • Soy sauce – 2 tablespoons
  • Fresh ginger, grated – 1 teaspoon
  • Lemon juice – 1 tablespoon
  • Eggplant – 2 medium-sized
  • Olive oil – 2 tablespoons
  • Salt and pepper – to taste
  • Fresh basil leaves – for garnish

Instructions

  1. Cook the orecchiette pasta in salted boiling water until al dente.
  2. Meanwhile, cut the eggplants into small cubes and sauté them in a pan with olive oil until golden brown. Season with salt and pepper.
  3. In a bowl, mix the miso paste, soy sauce, grated ginger, and lemon juice to form a smooth cream.
  4. Drain the pasta and reserve a cup of the cooking water.
  5. Add the miso mixture to the pan with the eggplants, then add the drained pasta. Stir well, adding some reserved cooking water to achieve a creamy consistency.
  6. Serve the pasta hot, garnished with fresh basil leaves.
