Ingredients
- 120g of sugar
- 100g of flour
- 100g of butter
- 2 eggs
- 50ml of coffee
- 1 tsp of baking powder
- 200g of mascarpone
- 80g of powdered sugar
- 100ml of heavy cream
- Cocoa powder for dusting
Instructions
- Preheat the oven to 180°C (350°F) and line a cupcake tray with liners.
- In a bowl, beat the sugar and butter until creamy.
- Add eggs one at a time, mixing well after each addition.
- Mix in the coffee.
- Sift the flour and baking powder into the mixture and fold gently.
- Divide the batter into the cupcake liners and bake for 20 minutes.
- While baking, prepare the mascarpone cream by beating mascarpone and powdered sugar together.
- In a separate bowl, whip the heavy cream until soft peaks form and fold into the mascarpone mixture.
- Once cupcakes are cooled, pipe the mascarpone cream on top.
- Dust with cocoa powder before serving.
