Ingredients

  • 200g of digestive biscuits
  • 100g of walnuts
  • 80g of unsalted butter
  • 400g of cream cheese
  • 200g of Greek yogurt
  • 100g of powdered sugar
  • 200ml of heavy cream
  • 3 tablespoons of wildflower honey
  • 4 fresh figs
  • Chopped walnuts for decoration

Instructions

  1. Begin by crushing the digestive biscuits and walnuts in a food processor until fine. Melt the unsalted butter and mix it with the crushed biscuits and walnuts until well combined.
  2. Press the mixture into the bottom of a springform pan to form the crust. Place it in the fridge to set for about 30 minutes.
  3. In a mixing bowl, whip the heavy cream until stiff peaks form. In another bowl, mix the cream cheese, Greek yogurt, powdered sugar, and wildflower honey until smooth.
  4. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Spread the cream mixture over the chilled crust and smooth the top with a spatula.
  6. Slice the fresh figs and arrange them on top of the cheesecake. Sprinkle with chopped walnuts for an added crunch.
  7. Refrigerate for at least 4 hours, preferably overnight, before serving.

Total Time

Approximately 30 minutes of preparation and 4 hours of chilling.
