Gnocchi al Pomodoro e Burrata

Ingredients

  • Potatoes – 500g
  • All-purpose flour – 150g
  • Egg – 1
  • Tomato sauce – 500ml
  • Burrata – 200g
  • Salt – to taste
  • Olive oil – 2 tbsp
  • Fresh basil – for garnish

Instructions

  1. Boil the potatoes with their skins on until tender. Peel and mash them while still warm.
  2. Combine the mashed potatoes with flour, egg, and a pinch of salt to form a dough.
  3. Roll the dough into long ropes and cut into small pieces to form the gnocchi.
  4. Bring a pot of salted water to a boil and cook the gnocchi until they float to the surface.
  5. In a saucepan, heat olive oil and add the tomato sauce, simmering for 10 minutes.
  6. Drain the gnocchi and toss them in the tomato sauce.
  7. Plate the gnocchi and top with pieces of burrata. Garnish with fresh basil before serving.
