Ingredients

  • 400g potato gnocchi
  • 500g clams
  • 2 medium zucchini, diced
  • 200g yellow cherry tomatoes, halved
  • 2 cloves of garlic, minced
  • 1/2 cup white wine
  • Fresh parsley, chopped
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté until fragrant.
  2. Add the clams and white wine, cover the skillet, and cook until the clams open.
  3. In the same skillet, add zucchini and sauté for about 5 minutes until tender.
  4. Add yellow cherry tomatoes, season with salt and pepper, and cook for an additional 5 minutes.
  5. Cook the gnocchi in boiling salted water until they float to the top, then drain them.
  6. Add the gnocchi to the skillet, tossing them gently to coat in the sauce.
  7. Garnish with fresh parsley and serve hot.
