Ingredients

  • 1 kg lamb shoulder, cubed
  • 4 artichokes
  • 300 g potatoes
  • 2 spring onions
  • Olive oil
  • Salt and pepper
  • 1 glass of white wine
  • Vegetable broth
  • Parsley

Instructions

  1. Clean the artichokes and cut them into wedges. Soak in lemon water to prevent browning.
  2. Peel and cube the potatoes.
  3. In a large pot, heat olive oil and brown the lamb cubes.
  4. Add the white wine and let it evaporate.
  5. Pour in enough vegetable broth to cover the lamb. Simmer on low heat for about 1 hour.
  6. In a separate pan, sauté the artichokes and spring onions in olive oil. Add the potatoes and cook until golden.
  7. Combine the sautéed vegetables with the lamb stew. Season with salt and pepper.
  8. Continue cooking for another 20 minutes until all ingredients are tender.
  9. Garnish with chopped parsley before serving.
