Light Vegetarian Lasagna: An Italian Delight

Ingredients

  • 250g egg lasagna sheets
  • 200g purple cauliflower
  • 200g yellow cauliflower
  • 200g broccoli
  • 500ml oat milk
  • 50g rice flour
  • 30ml extra virgin olive oil
  • 1 pinch saffron
  • 150g plant-based cheese (melty and grated)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. Steam the cauliflower and broccoli until tender. Set aside.
  3. In a saucepan, heat the olive oil and gradually add the rice flour, stirring constantly.
  4. Slowly add the oat milk, whisking to avoid lumps. Cook until thickened.
  5. Add saffron, salt, and pepper to the béchamel sauce.
  6. In a baking dish, spread a layer of béchamel, then a layer of lasagna sheets.
  7. Add a layer of mixed vegetables and sprinkle with plant-based cheese.
  8. Repeat the layers until all ingredients are used, finishing with béchamel and cheese on top.
  9. Bake for 30 minutes or until golden and bubbly.
  10. Let it cool slightly before serving.
