Ingredients

  • 500g flour
  • 250ml water
  • 15g fresh yeast
  • 10g sugar
  • 10g salt
  • 30ml olive oil
  • 400g Tropea red onions
  • 30g butter
  • Salt and pepper to taste

Instructions

  1. In a bowl, dissolve the yeast and sugar in lukewarm water. Let it sit for 10 minutes.
  2. In another bowl, mix flour and salt. Add the yeast mixture and olive oil, kneading until smooth.
  3. Let the dough rise for about 2 hours, or until doubled in size.
  4. Meanwhile, slice the onions and sauté in butter over low heat until soft. Season with salt and pepper.
  5. Roll out the dough into a rectangle. Spread the onions evenly over the surface.
  6. Roll the dough from the long side, then cut into 2 cm slices.
  7. Place the swirls on a baking sheet and let them rise for another 30 minutes.
  8. Bake in a preheated oven at 180°C (356°F) for 20 minutes or until golden brown.
