Paccheri with Grilled Pepper Cream and Ricotta

Ingredients

  • 350g paccheri pasta
  • 3 large red peppers
  • 200g cherry tomatoes
  • 200g ricotta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your grill or oven to roast the peppers. Char them until the skin blackens, then place them in a paper bag to steam for 10 minutes.
  2. Remove the skins, seeds, and stems from the peppers, and roughly chop them.
  3. In a skillet, heat olive oil over medium heat and add the cherry tomatoes, cooking until softened.
  4. Add the chopped grilled peppers to the skillet and blend to create a creamy sauce. Season with salt and pepper.
  5. Meanwhile, cook the paccheri according to package directions. Drain while reserving some pasta water.
  6. Combine the cooked paccheri with the grilled pepper sauce, adding reserved pasta water as needed to achieve the desired consistency.
  7. Serve the pasta topped with quenelles of fresh ricotta and garnish with fresh basil.
