Ingredients

  • Casarecce pasta – 320g
  • Baby squid – 500g
  • Fresh spinach – 100g
  • Pine nuts – 30g
  • Grated Parmesan cheese – 40g
  • Lemon zest – 1
  • Extra virgin olive oil – 60ml
  • Garlic clove – 1
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente.
  2. In a food processor, blend fresh spinach, pine nuts, Parmesan, lemon zest, and olive oil to make the pesto.
  3. Clean the baby squid and sauté them quickly in a pan with garlic and a little olive oil.
  4. Combine the cooked pasta with the spinach pesto and mix well.
  5. Add the sautéed squid and toss to combine.
  6. Season with salt and pepper to taste and serve immediately.
