Ingredients

  • 320g linguine pasta
  • 200g zucchini
  • 100g speck
  • 150g gorgonzola
  • 30g Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil a pot of salted water and cook the linguine until al dente.
  2. While the pasta cooks, wash and slice the zucchini thinly.
  3. In a pan, heat a little olive oil and cook the zucchini until soft.
  4. Add the speck, cut into strips, and cook for a few minutes.
  5. Reduce the heat and add the gorgonzola, stirring until it melts into a creamy sauce.
  6. Drain the pasta and add it to the pan, tossing to coat in the sauce.
  7. Sprinkle with Parmesan cheese, salt, and pepper. Serve hot.
