Radicchio and Potato Ravioli with Cheese Fondue – Italian Recipe

Ingredients

  • 300g flour
  • 3 eggs
  • 200g radicchio
  • 200g potatoes
  • 100g Fossa cheese
  • 100ml cream
  • Salt and pepper to taste
  • Butter

Instructions

Step 1: Prepare the dough by mixing flour and eggs until smooth. Let it rest for 30 minutes.

Step 2: Boil the potatoes until tender. Mash them and set aside.

Step 3: Sauté the radicchio in butter, then mix with the mashed potatoes. Season with salt and pepper.

Step 4: Roll out the dough and cut into squares. Place a spoonful of filling in each, then fold to form ravioli.

Step 5: For the fondue, melt the Fossa cheese with cream over low heat until smooth.

Step 6: Cook the ravioli in boiling salted water until they float. Serve with cheese fondue.
