Ingredients

  • 250g fresh ricotta
  • 100g blueberries
  • 50g Pavesini biscuits
  • 50g sugar
  • 1 tablespoon lemon juice
  • Fresh mint for decoration

Instructions

  1. In a blender, combine blueberries, lemon juice, and half of the sugar to create a coulis. Blend until smooth.
  2. In a mixing bowl, whisk the ricotta with the remaining sugar until creamy.
  3. In small cups, layer the ricotta mixture, Pavesini crumbled into pieces, and blueberry coulis.
  4. Repeat the layers until the cups are full.
