Ingredients

  • 200g all-purpose flour
  • 100g goat cheese
  • 80g fresh arugula
  • 100g apricots
  • 3 large eggs
  • 100ml milk
  • 80ml olive oil
  • 16g baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (356°F). Grease a plumcake pan.
  2. In a bowl, mix the flour, baking powder, salt, and pepper.
  3. In another bowl, beat the eggs and gradually add the milk and olive oil.
  4. Combine the wet and dry ingredients, mixing until smooth.
  5. Add the chopped arugula, crumbled goat cheese, and diced apricots to the batter. Mix gently.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool before slicing and serving.
