Ingredients

  • 400g fresh anchovies
  • 150g stale bread
  • 50g grated cheese (such as Parmigiano-Reggiano)
  • Fresh parsley, chopped
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • Flour, for dusting
  • Olive oil, for frying

Instructions

  1. Begin by cleaning the anchovies; remove the heads and open them flat, keeping the tails intact.
  2. In a bowl, combine the stale bread, grated cheese, chopped parsley, lemon zest, salt, and pepper.
  3. Fill each anchovy with the mixture, then fold them over or place another anchovy on top.
  4. Dredge the stuffed anchovies in flour to coat them lightly.
  5. Heat the olive oil in a frying pan over medium heat and fry the anchovies until golden brown and crispy.
  6. Drain on paper towels and serve warm, garnished with a sprinkle of lemon juice.
