Ingredients
- 200g all-purpose flour
- 100g unsalted butter
- 100g sugar
- 1 egg
- 2 tbsp coffee powder
- 200g cherries
- 100g dark chocolate
- 100ml heavy cream
- 100ml milk
- 50g powdered sugar
Instructions
- Preheat the oven to 180°C (356°F). In a bowl, mix flour, butter, sugar, and coffee powder to form a dough. Add the egg and knead until smooth.
- Roll out the dough and cut it into circles to fit tartlet molds. Press the dough into the molds and prick the base with a fork.
- Bake for 15 minutes or until golden. Let cool.
- In a saucepan, cook cherries with a bit of sugar until they become soft. Set aside.
- Melt chocolate with milk and half of the cream over low heat to make ganache. Let it cool slightly.
- Fill each tartlet shell with a spoonful of cherry compote and a layer of ganache.
- Whip the remaining cream with powdered sugar to make Chantilly cream.
- Top each tartlet with Chantilly cream and fresh cherries.
