Ingredients

  • 2 medium zucchinis, grated
  • 2 medium carrots, grated
  • 100g of grated Parmesan cheese
  • 2 eggs
  • 200ml of milk
  • 200g of all-purpose flour
  • 1 teaspoon of baking powder
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. In a bowl, combine the grated zucchinis and carrots with the eggs, milk, and grated Parmesan cheese.
  2. Add flour, baking powder, salt, and pepper. Mix until you have a smooth batter.
  3. Heat a non-stick frying pan over medium heat and lightly grease with oil.
  4. Pour a ladleful of the batter into the pan and cook until golden on one side, then flip and cook the other side.
  5. Repeat with the remaining batter, keeping the cooked pancakes warm.
  6. Serve warm, garnished with fresh herbs if desired.
