Ingredients

  • 300g Pavesini cookies
  • 500g mascarpone cheese
  • 200ml heavy cream
  • 100g dark chocolate
  • 80g sugar
  • 1 teaspoon vanilla extract
  • Red fruits for decoration

Instructions

  1. Begin by melting the dark chocolate in a heatproof bowl over simmering water.
  2. In another bowl, whip the heavy cream until soft peaks form.
  3. In a separate mixing bowl, combine the mascarpone cheese, sugar, and vanilla extract. Gently fold in the whipped cream.
  4. Add the melted chocolate to the mascarpone mixture and mix until well combined.
  5. Take a round springform cake pan and line it with plastic wrap.
  6. Dip each Pavesini cookie in a mixture of warm water and sugar, then arrange them around the edges of the pan.
  7. Layer half of the mascarpone-chocolate mixture inside the cookie-lined pan.
  8. Repeat with another layer of dipped Pavesini and finish with the remaining mascarpone mixture.
  9. Chill in the refrigerator for at least 4 hours or until set.
  10. Once set, carefully remove from the pan and garnish with red fruits before serving.
