  • 2 kg veal roast
  • 250 ml Marsala wine
  • 2 onions
  • 2 garlic cloves
  • Fresh rosemary
  • Olive oil
  • Salt

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a large, heavy-bottomed pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
  3. Season the veal roast with salt and pepper, then add it to the pot, searing on all sides until browned.
  4. Pour in the Marsala wine and add fresh rosemary. Cover and cook slowly.
  5. Transfer the pot to the oven and roast for about 2 to 3 hours, basting occasionally.
  6. Once tender, remove from oven, let rest, then slice and serve with the sauce.
