Ingredients

  • 4 large potatoes
  • 100g Asiago cheese
  • 100g Gruyere cheese
  • 100g smoked Scamorza cheese
  • 50g Parmesan cheese
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 200°C (392°F).
  2. Boil the potatoes until tender, then let them cool slightly.
  3. Cut the top off each potato and scoop out the inside to create a cavity.
  4. In a bowl, mix the scooped potato with Asiago, Gruyere, and Scamorza cheeses.
  5. Season with salt and pepper, and fill each potato with the cheese mixture.
  6. Sprinkle Parmesan cheese on top and drizzle with olive oil.
  7. Bake in the oven for 15-20 minutes until the top is golden and crispy.
