In this recipe, cherry tomatoes are used in two ways: some are blended into a creamy sauce that coats the pasta, while others are simply cut into wedges, adding freshness and vibrancy to the dish. Crumbled feta and Taggiasca olives enhance the flavor, while basil adds a Mediterranean aroma.

Ingredients

  • 320g short pasta
  • 200g cherry tomatoes
  • 150g feta cheese
  • 80g Taggiasca olives
  • Fresh basil leaves
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and let cool.
  2. Blend half of the cherry tomatoes with olive oil, salt, and pepper to create a sauce.
  3. Cut the remaining cherry tomatoes into wedges.
  4. In a large bowl, combine the cooled pasta, tomato sauce, cherry tomato wedges, crumbled feta, and olives.
  5. Toss gently to mix all ingredients.
  6. Garnish with fresh basil leaves before serving.
