Ingredients

  • 200g lactose-free cream cheese
  • 100g lactose-free yogurt
  • 150g digestive biscuits
  • 80g lactose-free butter
  • 100g sugar
  • 8g gelatin sheets
  • 300g fresh apricots
  • 1 lemon (juice and zest)

Instructions

  1. Crush the digestive biscuits and mix them with melted lactose-free butter. Press the mixture into a springform pan to form the base.
  2. Soak gelatin sheets in cold water until soft.
  3. In a bowl, mix lactose-free cream cheese, yogurt, and sugar until smooth. Add lemon juice and zest.
  4. Heat a small amount of the cream cheese mixture and dissolve the gelatin in it. Combine with the rest of the mixture.
  5. Pour the mixture over the biscuit base and refrigerate until set.
  6. Slice apricots and arrange them on top of the cheesecake.
  7. Refrigerate until fully set before serving.
