Crispy Zucchini

Crispy zucchini is a delightful and easy Italian side dish, made with simple ingredients and baked until golden and fragrant. The breadcrumb, Parmesan, and herb mixture keeps the zucchini tender inside and perfectly crispy outside. Ingredients

  • 2 medium zucchinis
  • 100g breadcrumbs
  • 50g grated Parmesan cheese
  • 1 tablespoon mixed herbs (like thyme, oregano)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 200°C (392°F).
  2. Wash and slice the zucchinis into thin rounds.
  3. In a bowl, combine breadcrumbs, Parmesan, mixed herbs, salt, and pepper.
  4. Dip each zucchini slice in olive oil and then coat with the breadcrumb mixture.
  5. Place the slices on a baking tray lined with parchment paper.
  6. Bake for 20-25 minutes or until golden and crispy.
