Ingredients

  • 500g All-purpose flour
  • 300ml Water
  • 25g Fresh yeast
  • 10g Salt
  • 50ml Extra virgin olive oil
  • 200g White grapes
  • Rosemary, to taste
  • 150g Parmigiano Reggiano DOP
  • 100ml Fresh cream

Instructions

  1. In a large bowl, dissolve the yeast in warm water. Add flour and salt, and mix until a dough forms.
  2. Knead the dough until smooth, then cover and let it rise until doubled in size.
  3. Preheat your oven to 200°C (392°F).
  4. Roll out the dough on a baking sheet, drizzle with olive oil, and sprinkle with rosemary.
  5. Press the grapes gently into the dough.
  6. Bake for 20-25 minutes until golden brown.
  7. In a saucepan, heat the fresh cream and add grated Parmigiano Reggiano until smooth.
  8. Serve the focaccia warm, topped with the Parmigiano cream.
