Ingredients

  • 400g (14 oz) desalinated cod fillet
  • 250g (9 oz) arugula
  • 2 oranges
  • 100g (3.5 oz) Taggiasca olives
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a pot, bring water to a boil and add the desalinated cod fillet. Cook for about 10-15 minutes until the fish is tender.
  2. Once cooked, remove the cod from the pot and let it cool slightly before flaking it into bite-sized pieces.
  3. In a bowl, prepare the dressing by mixing olive oil, minced garlic, chopped parsley, salt, and pepper.
  4. On a serving plate, lay a bed of arugula. Arrange the cod flakes on top, followed by orange segments and Taggiasca olives.
  5. Drizzle the parsley dressing over the salad and serve immediately.
