Ingredients

  • 320g Pasta
  • 400g Zucchini
  • 150g Goat Cheese
  • 1 Lemon
  • 1 teaspoon Turmeric
  • Extra Virgin Olive Oil
  • Salt
  • Pepper

Instructions

  1. Start by washing and cutting the zucchini into rounds.
  2. In a pan, heat some olive oil and cook the zucchini until soft.
  3. Blend the zucchini into a smooth cream.
  4. Cook the pasta in salted water until al dente.
  5. In a bowl, mix the goat cheese with lemon zest and turmeric.
  6. Combine the zucchini cream with the cheese mixture.
  7. Drain the pasta and toss it with the creamy sauce.
  8. Season with salt and pepper to taste.
