Ingredients

  • 200g smoked salmon
  • 2 ripe peaches
  • 50ml olive oil
  • Fresh basil leaves
  • Salt to taste
  • Pepper to taste
  • Juice of 1 lemon
  • Homemade basil mayonnaise

Instructions

  1. Thinly slice the peaches and arrange them on a serving plate.
  2. Lay the smoked salmon slices over the peaches.
  3. In a blender, combine olive oil, basil leaves, and lemon juice. Blend until smooth.
  4. Drizzle the basil oil over the salmon and peaches.
  5. Season with salt and pepper to taste.
  6. Garnish with additional basil leaves and serve immediately with a side of homemade basil mayonnaise.
