Ingredients

  • 200g all-purpose flour
  • 150g sugar
  • 100g yogurt
  • 100g butter
  • 3 eggs
  • 1 lemon, zested
  • 16g baking powder
  • Custard cream
  • Diplomatic cream
  • Sugar flowers for decoration

Instructions

  1. Preheat the oven to 180°C (356°F). Grease and flour a plumcake mold.
  2. In a bowl, beat the sugar and butter until creamy. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the yogurt and lemon zest.
  4. Sift the flour and baking powder, then gently fold into the mixture.
  5. Pour the batter into the prepared mold and bake for 45 minutes or until a toothpick comes out clean.
  6. Let it cool, then cut the top off the plumcake and hollow out the center.
  7. Fill with custard cream and cover with the diplomatic cream.
  8. Decorate with the reserved crumbs and sugar flowers.
