Ingredients

  • 400g potatoes
  • 240g canned chickpeas, drained
  • 1 egg
  • 50g breadcrumbs
  • 1 tsp sweet paprika
  • Salt to taste
  • Freshly ground black pepper to taste
  • 150g cherry tomatoes
  • 100g radishes
  • 50g Grana Padano flakes
  • Extra virgin olive oil
  • Mixed salad greens

Instructions

  1. Boil the potatoes in salted water until tender. Peel and mash them.
  2. In a bowl, combine mashed potatoes, chickpeas, egg, breadcrumbs, paprika, salt, and pepper. Mix well.
  3. Shape the mixture into small balls.
