Ingredients
- 4 medium-sized calamari
- 100g bread crumbs
- 50g black olives, chopped
- 20g capers, rinsed
- 4 anchovy fillets
- 1 garlic clove, minced
- Parsley, chopped
- 50ml olive oil
- Salt and pepper, to taste
- 200g fresh peas
- 100ml vegetable broth
- 1 onion, chopped
- Butter, a knob
Instructions
- Clean the calamari, removing the tentacles and setting them aside. Rinse thoroughly.
- In a bowl, mix bread crumbs, chopped olives, capers, anchovies, garlic, parsley, olive oil, salt, and pepper. Add chopped tentacles and mix well.
- Stuff the calamari with the mixture and secure with toothpicks.
