Ingredients

  • 4 medium-sized calamari
  • 100g bread crumbs
  • 50g black olives, chopped
  • 20g capers, rinsed
  • 4 anchovy fillets
  • 1 garlic clove, minced
  • Parsley, chopped
  • 50ml olive oil
  • Salt and pepper, to taste
  • 200g fresh peas
  • 100ml vegetable broth
  • 1 onion, chopped
  • Butter, a knob

Instructions

  1. Clean the calamari, removing the tentacles and setting them aside. Rinse thoroughly.
  2. In a bowl, mix bread crumbs, chopped olives, capers, anchovies, garlic, parsley, olive oil, salt, and pepper. Add chopped tentacles and mix well.
  3. Stuff the calamari with the mixture and secure with toothpicks.
  4. In a pan, melt butter and sauté onion until translucent. Add peas and vegetable broth, cooking until peas are tender.
  5. Blend peas into a smooth cream. Season with salt and pepper.
  6. In another pan, heat olive oil and cook stuffed calamari until golden and cooked through.
  7. Serve calamari on a bed of pea cream.
