Ingredients

  • Spaghetti – 320g
  • Red bell peppers – 2
  • Yellow bell peppers – 2
  • Friggitello peppers – 4
  • Jalapeño – 1
  • Ricotta salata – 50g
  • Peperone crusco – 1
  • Extra virgin olive oil – 3 tbsp
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 200°C (392°F). Roast the red and yellow peppers for about 20 minutes until the skins blister.
  2. Once cooled, peel and slice the roasted peppers.
  3. Slice the friggitello and jalapeño peppers, removing seeds if preferred.
  4. In a large pan, heat olive oil over medium heat and sauté all the peppers for a few minutes.
  5. Cook the spaghetti according to package instructions until al dente.
  6. Reserve some pasta water, then drain the spaghetti.
  7. Add the pasta to the pan with the peppers, tossing to combine. Use reserved pasta water to adjust the sauce consistency.
  8. Grate ricotta salata over the pasta and mix well.
  9. Top with crumbled peperone crusco before serving.
